Ingredients :

  1. Basmati rice – 1cup
  2. Corn kernels – 1 cup
  3. Green peas – 1 cup
  4. Cashews halved, 10 -12
  5. Chili Powder – 1 tsp
  6. Sambar masala – 1 tsp
  7. Garam masala – ½ tsp
  8. Sugar – 1 tsp
  9. Turmeric powder – ¼ tsp
  10. Salt to taste
  11. Juice of 1 lemon
  12. Oil or ghee – 2 tbsp
  13. Cumin seeds – ½ tsp
  14. Mustard seeds – ½ tsp
  • In a heavy saucepan heat the ghee.
  • Add the cashews and fry till light brown.
  • Remove.
  • To same oil add cumin and mustard seeds to splutter.
  • Add the corn, peas, rice and all dry masalas and 5 cups water. Cover and cook till almost done.
  • Add lemon juice, sugar, coriander and cashews.
  • Cover and cook till rice is done and no water is left.
  • Extra masalas may be added as per desired spiciness.
  • Serve hot with curd.
