Ingredients :

  1. Potatoes – 900 gms
  2. Red Bell Peppers – 2
  3. Celery Sticks – 2
  4. Spring onions – 3
  5. Fresh Green Chili – 1
  6. Garlic, crushed – 1 clove
  7. Fresh Basil, finely chopped – 2 tsp
  8. Fresh Parsley, finely chopped – 1 tbsp
  9. Single Cream – 2 tbsp
  10. Mayonnaise – 3 tbsp
  11. Mild Mustard – 1 tsp
  12. Granulated Sugar – 1 ½ tsp
  13. Salt – to taste

Method:

  • Peel the potatoes.
  • Boil in salted water for 10-12 minutes, until tender. Drain and cool, then cut into cubes and place in a large mixing bowl.
  • Halve the peppers, cut away and discard the core and seeds and cut the flesh into small pieces.
  • Finely chop the celery, spring onions and slice the chili very thinly discarding the seeds.
  • Add the vegetables to the potatoes together with the garlic and the herbs.
  • Mix the cream, mayonnaise, mustard and sugar in a small bowl, stirring until the mixture is well combined.
  • Pour the dressing over the salad and stir gently to coat evenly.
  • Serve.
