Ingredients :

  1. Cauliflower, chopped - 1 small
  2. Potato, diced - 1 large
  3. Onion, chopped - 1
  4. Oil - 1 tbsp
  5. Garlic, crushed - 1 clove
  6. Fresh Ginger, grated - 1 tbsp
  7. Turmeric Powder - 2 tsp
  8. Cumin Seeds - 1 tsp
  9. Black Mustard Seeds - 1 tsp
  10. Coriander Powder - 2 tsp
  11. Vegetable stock - 4 cups
  12. Natural Low Fat Yoghurt - 1 ΒΌ cups
  13. Salt & Black Pepper - to taste
  14. Fresh Coriander - to garnish

Method:

  • Put the potato, cauliflower and onion into a large heavy pan with the oil and 3 tbsp water.
  • Heat until hot and bubbling, then stir well, cover the pan and turn the heat down.
  • Continue cooking the mixture for about 10 minutes.
  • Add the garlic, ginger and spices.
  • Stir well and cook for another 2 minutes, stirring occasionally.
  • Pour in the stock and season well. Bring to the boil, then cover and simmer for about 20 minutes.
  • Puree in a food processor and return to the pan.
  • Stir in the yoghurt, adjust the seasoning, and serve, garnished with coriander or parsley.
